Oh Grant Achatz, you so crazy

Grant Achatz is part Thomas Keller and part mad, mad, mad scientist. With his new foray, Alinea (beware: website is nothing more than a very weird movie trailer-ish thing for the restaurant) set to open in early 2005 (dates anyone? I have looked everywhere and can’t find anything), Achatz is moving even further out into the stratosphere.

An article in Food & Wine gives a glimpse into what might be offered, unless someone else does it first. What do I mean by that? Read about the Dried Creme Brulee and you’ll see. Virtual Shrimp Cocktail? This I am gonna have to see to decide on. I am not sure if I can spend a substantial portion of my paycheck for virtual food and essence of horseradish.
