I can’t get enough of Alinea, it’s like a sickness. The picture by picture vicarious meal was great, but now I want video. The Discovery Channel has a profile on Alinea as part of their Gourmet Science week, with a lo-res vid available for streaming. Keep an eye out for the melted, non-melting, and then finally exploding butter. Insane! Chef, yes. Evil genius, maybe.
